Strawberry Greek Yogurt Pops Recipe

These delicious and super easy yogurt-based ice pops inspired by Weelicious are the perfect summer treat for the entire family.  They are a healthy way to cool down during those summer heated days.  We like to use fresh strawberries, gluten-free granola, and Old Salt Merchants Cinnamon Sugar for a unique burst of flavor.

Ingredients

  • 1/2 cup of oat milk (or any milk) 
  • 1 cup plain greek yogurt
  • 1 cup of diced strawberries 
  • 1 tbs honey 
  • 1/2 cup finely ground granola (we like Purely Elizabeth or make your own)
  • 2-3 extra Strawberries (chopped finely) we add this to the mixture 
  • 1 Tbs Old Salt Merchants Cinnamon Sugar (we sprinkle this at the end when we serve)

Instructions

  1. In a blender place 1 cup strawberries, oat milk, yogurt and honey and blend for 1 minute until smooth.
  2. Place finely diced strawberries into the mixture along with the granola.
  3. Fill each mold with the strawberry yogurt mixture and place them in the freezer. If using small dixie cups, fill 3/4 of the way.
  4. Remove cups from the freezer after 1 hour and stick a popsicle stick into the center of each mold or cup.
  5. Place molds or cups back in the freezer and let freeze for an additional 4-6 hours.
  6. To serve - sprinkle Old Salt's Cinnamon Sugar for a delightful burst of flavor.
